Guacamole

 Use ripe avocados, soft when pressed and starting to turn a little black.

  • 1-2 ripe avocados (3 if very small)
  • 1 small onion
  • 2 green chilis
  • 1 medium tomato
  • 2 tsp chopped garlic
  • 1/2 cup fresh cilantro
  • 1 tsp salt
  • 3-4 Tbsp lemon juice or to taste
  • splash of olive oil (optional)
Halve the avocado, scoop out the stone.
Scoop pulp from the skin with a spoon.
Mash the pulp.

Remove seeds from the tomato.
Chop fine: onion chilis, tomato.
Add all ingredients to the avocado and mash.

If not using immediately press plastic wrap against the guacamole and cover to keep it from turning brown.
