Mexican Refried Beans

Use hot or cold as a side dish or a filling.

  • 1 cup dry black beans OR dry red kidney beans
  • 1/4 cup chopped onion
  • 2 cloves garlic, chopped
  • 1 medium tomato, chopped
  • 3 Tbsp canola oil
  • 1/2 tsp red chili powder
  • 1 tsp salt or to taste
Clean and soak the beans in water 6-8 hours or overnight.

Place beans in a pan with 3 cups water.
Add chopped onion, garlic, tomato.
Cover and boil until beans are tender.
Remove the lid and simmer 5 minutes more.

Mash the beans in the water and set aside.
Sautee 1/4 cup chopped onion in hot oil.
When onion is soft, stir in bean mixture, salt, chili powder.
Bring to a boil.
Lower heat and cook covere 10 minutes, stirring and mashing.
