A pastry crust with a pineapple filling and a coconut topping. Bake, cool and cut in squares.
Preheat oven to 350 degrees F.
Mix base:
- 1 Tbsp butter
- 1/2 tsp salt
- 3 eggs
- 1 Tbsp sugar
- 1 cup flour
- 1 tsp baking powder
Sift together flour, baking powder and salt.
Mix together butter mixture and flour mixture.
Beat eggs and mix in HALF of the beaten eggs.
Press into an 8 inch square pan.
Beat together:
- 1Tbsp melted butter
- 2 cups coconut
- 3/4 cup sugar
- remainder of beaten eggs
Cover uncooked base in the pan with:
- 1 small can crushed pineapple, drained well.
Spread the beaten coconut topping over the pineapple.
Bake in 350 degree oven about 30 minutes.
