Chocolate Tips & Substitutions

 To  make 1 oz (28 grams) unsweetened chocolate, mix:

  • 3 Tbsp (15 mL) cocoa
  • 1 Tbsp shortening
To make 1 oz semisweet chocolate, mix:
  • 3 Tbsp cocoa
  • 2 Tbsp shortening
  • 3 Tbsp icing sugar
Chocolate Curls

Slightly warm a square or chunk of semi-sweet chocolate.
Draw the blade of a vegetable peeler across the surface to form curls.

Melting Chocolate in a Double Boiler
In the lower half of a double boiler, heat water to simmering (not boiling).
Make sure the pot on top is completely dry, even one drop of water will cause the chocolate to seize up.
Melt the chocolate in the top half of the double boiler, over the simmering water.
Adding 1-2 Tbsp of vegetable oil (not butter) to chocolate will aid the melting process.

Chocolate may be melted in liquid that's called for in a recipe.
When adding liquid to chocolate add at least 2 tablespoons at a time.
There should be no more than 6 oz. of chocolate to 1/4 cup of liquid.

Melting Chocolate in the Microwave
Microwave 1 to 3 squares (ounces) of chocolate at medium or low, 2-3 minutes per square.
When chocolate has started to soften, stir to finish the melting process.
