Vanilla Nut Milk
- 1 cup nuts (walnut halves) rinsed
- 1 Tbsp honey or agave nectar
- 1 tsp pure vanilla extract
- pinch of salt (optional)
Place walnuts in a medium bowl.
Fill with enough water to cover by 1 inch.
Cover and set aside to soak at room temperature at least 1 hour or overnight for easy blending. (Soak nuts up to 12 hours at room temperature.)
Drain nuts and rinse thoroughly with water.
In a blender, combne the prepared nuts, 3 cups water, honey, vanilla, salt.
Blend on low until very smooth (at least 2 minutes).
Strain through a cheesecloth for perfectly smooth nut milk.
Serve immediately or store in the refrigerator up to 5 days.
Vanilla Smoothie (1 serving)
Blend in a blender at high speed till smooth:
- 1 cup nut milk
- 1 cup yogurt (plain, vanilla or flavored)
- 1 cup fruit (fresh or frozen)
- splash of vanilla
- pinch of cinnamon
Add and blend till crushed:
- 1 cup ice
Watermelon Strawberry Smoothie
Makes 4 servings
- 4 cups cubed watermelon
- 1 cup halved hulled strawberries
- 1/2 cup Balkan-style plain yogurt
- 2 tsp lime juice
- Freeze watermelon cubes on a parchment paper lined tray until solid (30 minutes).
- In blender, puree frozen watermelon, yogurt and lime juice until smooth.
