Baked in individual ramekins (quickly cut the bread into rounds to fit with a biscuit cutter) using warm rotisserie chicken, the pot pies will cook in 12 minutes. Using cold chicken and pre-made refrigerated white sauce and/or a larger greased casserole dish, the baking time will take longer, so bake until golden brown and heated through.
Variation: Add some hot sauce to the white sauce, or use hot peppers instead of the onion in the sauce. Substitute tortillas for the sandwich bread.
Preheat oven to 375 degrees F
Make onion white sauce in a saucepan:
- 2 Tbsp finely chopped onion, cooked in...
- 2 Tbsp melted butter, then whisk in...
- 2 Tbsp flour to make a paste, then whisk in...
- 1-1/2 cups milk till thickened and add...
- salt and pepper to taste
Add 1-1/2 cups sauce to:
- 4 cups shredded cooked (rotisserie) chicken
- 1/2 cup frozen peas-and-carrots blend
Put in ramekins or greased casserole dish.
Top with:
- buttered sandwich bread
Bake in preheated 375 degree F oven until golden brown (about 12 minutes for individual ramekins).
