Left-Over Rotisserie "Chicken Pot Pie"

Baked in individual ramekins (quickly cut the bread into rounds to fit with a biscuit cutter) using warm rotisserie chicken, the pot pies will cook in 12 minutes. Using cold chicken and pre-made refrigerated white sauce and/or a larger greased casserole dish, the baking time will take longer, so bake until golden brown and heated through.

Variation: Add some hot sauce to the white sauce, or use hot peppers instead of the onion in the sauce. Substitute tortillas for the sandwich bread. 

Preheat oven to 375 degrees F

Make onion white sauce in a saucepan:

  • 2 Tbsp finely chopped onion, cooked in...
  • 2 Tbsp melted butter, then whisk in...
  • 2 Tbsp flour to make a paste, then whisk in...
  • 1-1/2 cups milk till thickened and add...
  • salt and pepper to taste
Add 1-1/2 cups sauce to:
  • 4 cups shredded cooked (rotisserie) chicken
  • 1/2 cup frozen peas-and-carrots blend
Put in ramekins or greased casserole dish.
Top with:
  • buttered sandwich bread
Bake in preheated 375 degree F oven until golden brown (about 12 minutes for individual ramekins).
