Chia Pudding

Simple Chia Pudding

Use regular, almond, oat or coconut milk. Full-fat coconut milk out of the can makes a creamy, rich pudding.

  • 4 Tbsp chia seeds
  • 1 cup milk
  • 1 Tbsp maple syrup or honey (optional)
  • optional toppings (berries, granola)
  1. Use a mason jar or a bowl.
  2. Stir the chia seeds into the milk for 5-10 minutes, then stir in sweetener if desired.
  3. Refrigerate overnight.
  4. In the morning, if having for breakfast, top with some berries or other chopped fruit and a sprinkling of granola if desired

Chia + Yogurt Pudding for 4

  • 1-3/4 cups milk
  • 1 cup yogurt (plain, flavored or Greek)
  • 2 Tbsp honey, maple or agave syrup)
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 cup chia seeds
  • Optional toppings: fruit, toasted nuts, granola, coconut, etc.
  1. In a medium bowl whisk together milk, yogurt, honey, vanilla, salt.
  2. Whisk in chia seeds, stir about 5 minutes.
  3. Divide among 4 six-ounce bowls, cover and chill at least 2 hours.

 Protein Powder Chocolate Chia Pudding

  • 1 scoop chocolate protein powder
  • 1/2 cup cold almond milk
  • 1 Tbsp cocoa powder
  • 2 Tbsp chia seeds
  1. Mix ingredients together well, cover and refrigerate at least 2 hours.

Chocolate Chia Pudding

  • 1-3/4 cups milk or unsweetened nut milk
  • 1 cup plain Greek yogurt
  • 3 Tbsp honey, maple syrup or agave syrup
  • 1/4 tsp salt
  • 3 Tbsp unsweetened cocoa powder
  • 1 tsp cinnamon
  • 1/2 cup chia seeds
  • Toppers: fruit, toasted nuts, granola, or toasted coconut (optional)
  1. In a medium bowl, whisk together milk, yogurt, honey, vanilla, salt.
  2. Whisk in cocoa powder and cinnamon.
  3. Whisk in chia seeds.
  4. Divide mixture in 4 bowls or jars, cover and chill at least 2 hours, add toppings if desired.

Coconut Chia Pudding
  • 1-3/4 cups coconut milk
  • 1 cup coconut yogurt
  • 2 Tbsp honey, maple syrup, or agave syrup,
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 cup chia seeds
  • Optional: chopped fresh pineapple or mango, 1 tsp. lime zest, toasted coconut flakes.
  1. In a medium bowl, whisk together milk, yogurt, honey, vanilla, salt.
  2. Whisk in chia seeds.
  3. Divide in 4 bowls, chill 2 hours.
  4. Top with chopped  tropical fruit and 1 tsp lime zest if desired and sprinkle with toasted coconut flakes.
