Simple Chia Pudding
Use regular, almond, oat or coconut milk. Full-fat coconut milk out of the can makes a creamy, rich pudding.
- 4 Tbsp chia seeds
- 1 cup milk
- 1 Tbsp maple syrup or honey (optional)
- optional toppings (berries, granola)
- Use a mason jar or a bowl.
- Stir the chia seeds into the milk for 5-10 minutes, then stir in sweetener if desired.
- Refrigerate overnight.
- Top with berries or chopped fruit and a sprinkling of granola.
Chia Chai Pudding
- 1 cup boiling water
- 3 chai black tea bags
- 1/2 cup black chia seeds
- 1 cup milk (dairy or plant-based)
- 1 tsp vanilla extract
- 3 Tbsp maple syrup
- 1 Tbsp butter
- pinch of salt
- 3 ripe pears or apples, peeled and diced
- granola (optional)
1. Steep 3 tea bags in 1 cup boiled water for 10 minutes, discard bags.
2. In a bowl, mix: 1/2 cup chia seeds, 1 cup milk, 1 tsp vanilla, 3 Tbsp maple syrup, pinch of salt.
3. Refrigerate mixture for 4 hours or overnight.
4. Peel and dice 3 pears or apples and cook in a saucepan with 1 Tbsp maple syrup, 1/4 cup water, 1 Tbsp butter and a pinch of salt for 20 minutes until soft and golden.
5. Serve the chilled chia pudding topped with the warm fruit and sprinkle with granola if desired.
Chia + Yogurt Pudding for 4
- 1-3/4 cups milk
- 1 cup yogurt (plain, flavored or Greek)
- 2 Tbsp honey, maple or agave syrup)
- 1 tsp vanilla
- 1/4 tsp salt
- 1/2 cup chia seeds
- optional toppings: fruit, toasted nuts, granola, coconut
- In a medium bowl whisk together milk, yogurt, honey, vanilla, salt.
- Whisk in chia seeds, stir about 5 minutes.
- Divide among 4 six-ounce bowls, cover and chill at least 2 hours.
Protein Powder Chocolate Chia Pudding
- 1 scoop chocolate protein powder
- 1/2 cup cold almond milk
- 1 Tbsp cocoa powder
- 2 Tbsp chia seeds
- Mix ingredients together well, cover and refrigerate at least 2 hours.
Chocolate Chia Pudding
- 1-3/4 cups milk or unsweetened nut milk
- 1 cup plain Greek yogurt
- 3 Tbsp honey, maple syrup or agave syrup
- 1/4 tsp salt
- 3 Tbsp unsweetened cocoa powder
- 1 tsp cinnamon
- 1/2 cup chia seeds
- Toppers: fruit, toasted nuts, granola, or toasted coconut (optional)
- In a medium bowl, whisk together milk, yogurt, honey, vanilla, salt.
- Whisk in cocoa powder and cinnamon.
- Whisk in chia seeds.
- Divide mixture in 4 bowls or jars, cover and chill at least 2 hours, add toppings if desired.
Coconut Chia Pudding
- 1-3/4 cups coconut milk
- 1 cup coconut yogurt
- 2 Tbsp honey, maple syrup, or agave syrup,
- 1 tsp vanilla
- 1/4 tsp salt
- 1/2 cup chia seeds
- Optional: chopped fresh pineapple or mango, 1 tsp. lime zest, toasted coconut flakes.
- In a medium bowl, whisk together milk, yogurt, honey, vanilla, salt.
- Whisk in chia seeds.
- Divide in 4 bowls, chill 2 hours.
- Top with chopped tropical fruit and 1 tsp lime zest if desired and sprinkle with toasted coconut flakes.
