Spinach Salad

Spinach has to be washed and drained/dried very thoroughly before being eaten fresh (even if the package says it has been pre-washed. The dressing can be used in a cold chicken salad or mixed in with sautéed spinach and hot chicken.

Orange Sesame Almond Dressing

Whisk together:
  • 1/4 cup smooth almond butter
  • 2 Tbsp honey
  • 1 Tbsp soy sauce
  • 1 Tbsp dark sesame oil
  • 1 Tbsp canola oil
  • 1 Tbsp rice vinegar
  • juice of 2 oranges (see below)
Cut the peel from the top and bottoms of 2 oranges. Cut off and discard remaining peel and pith (the white part.) Cut orange segments into the salad bowl. Squeeze juice from leftover pulp into dressing.

To make cold chicken salad: Shred 2 cooked chicken breasts. Toss with package of baby spinach and the almond dressing. Top with 2 thinly sliced green onions.

Spinach Salad with Water Chestnuts
  • fresh spinach
  • 1 can mandarin oranges, drained
  • water chestnuts, chopped
  • red onion, chopped
  • salt and pepper
Dressing:
  • 1/2 cup vegetable oil
  • 2/3 cup white vinegar
  • 2 tsp salt
  • 1/4 tsp basil
  • 1/4 tsp oregano
  • 1/8 tsp pepper
  • 3 cloves garlic
  • 1/4 tsp dry mustard
  • 1-4 tsp sugar if desired (to taste)
  1. Wash and dry spinach. Best done the night before and refrigerated.
  2. Chop red onion and spinach, set aside.
  3. Mince garlic and set in a lidded container, then mix dressing and add to garlic. Shake or stir. Keep in the fridge until ready to dress the salad.
  4. Add all ingredients to spinach just before serving, then add dressing, serve immediately.
