Almond Dressing
Whisk together:
- 1/4 cup smooth almond butter
- 2 Tbsp honey
- 1 Tbsp soy sauce
- 1 Tbsp dark sesame oil
- 1 Tbsp canola oil
- 1 Tbsp rice vinegar
- orange juice (see below)
Cut the peel from the top and bottoms of 2 oranges. Cut off and discard remaining peel and pith (the white part.) Cut orange segments into the salad bowl. Squeeze juice from leftover pulp into dressing.
To make cold chicken salad: Shred 2 cooked chicken breasts. Toss with package of baby spinach and almond dressing. Top with 2 thinly sliced green onions.
