Butterscotch Pudding

In a medium-sized pot, whisk:
  • 2/3 cup brown sugar
  • 3 tbsp cornstarch
  • pinch salt
  • 1/2 cup milk

In a measuring cup, whisk:

  • 1-1/2 cups milk
  • 1 egg

Whisk beaten egg and milk mixture into the mixture in the pot. Put the pot on the stove, on medium heat and keep stirring so that the pudding doesn't get lumpy. When it boils, turn the heat to low and keep stirring for 1 minute, then remove from heat. Stir in:

  • 1 tsp vanilla
  • 2 tbsp butter

Whisk well. Pour into a serving bowl or smaller dessert dishes and refrigerate 2-3 hours to set.
Serves 4-5.
