If you are short 1 egg when making a recipe calling for more than 1 egg, add:
- 1/2 tsp extra baking powder AND
- 2 Tbsp extra milk.
In quick bread, muffin recipes and pancake mixtures substitute for 1 egg:
- 1/4 cup applesauce OR
- 1/4 cup mashed banana OR
- 1/4 cup mashed avocado OR
- 1/4 cup carbonated water OR
- 1 Tbsp white vinegar + 1 tsp baking soda OR
- 3 Tbsp whipped aquafaba (whipped chickpea liquid)
In brownies, cakes or drop cookies, you can substitute for 1 egg:
- 1/4 cup yogurt or buttermilk AND
- 1/4 tsp baking powder
In cakes or custards, substitute for 1 egg:
- 2 Tbsp arrowroot powder AND
- 3 Tbsp water
In breads, cookies or pancakes, seeds substitute for 1 egg. Mix:
- 2 Tbsp ground chia seeds
- 2 Tbsp warm water and
- 1 Tbsp vegetable oil
- OR soak 1 Tbsp ground flaxseed in 3 Tbsp warm water for 10 minutes.
To thicken a sauce, instead of adding 1 egg, substitute 2 Tbsp white flour OR 1 Tbsp cornstarch.
